Substitute white wine for vermouth?

I have a recipe that calls for 1/2 cup vermouth to de-glaze a pan and make a sauce. I would have to buy a whole bottle and it would probably never be used again. I do, however, have access to some chablis blanc wine. Would this be an acceptable substitute? From what I can read about vermouth it is basically a wine fortified with aromatic herbs and spices. Anyone?

Yes it will work. It might not taste exactly how it would if you had used vermouth, but you are correct about what vermouth is and that it will sub perfectly well.

Something to keep in mind though is that the reverse is usually true too. When you have a recipe that calls for white wine you can use vermouth instead. The good thing about vermouth is that it is fortified (with extra alcohol if I am not mistaken) so it has a very long shelf life. You can buy a bottle and use what you need for a recipe and then put it away. The next time you have a recipe that calls for white wine you can pull the vermouth out again. This way, if you do not already have an open bottle of white you don't have to pop one open just for the recipe.
