How about piercing the lid with a few holes or covering it with muslin cloth instead of having to go back & forth to open it for a few hours every few days? Life’s busy. Anyway without using a “mother” you will never get the full flavour.

Hey, I’ll give this a go – Why not!
I don’t have any red wind vinegar handy in my cupboard; can I use white wine vinegar and add it to an open bottle of red wine to start the process in the same way?
